Memorial Day. Coffee. Chili.
In the spirit of Memorial Day and America’s Best Organic Coffee, both American Institutions (ummm, remember the Boston Tea Party?). I figure the formula for a great trifecta would be to kick it off with a holiday favorite. Chili. Oh yeah. And coffee! This’ll be interesting, chili coffee. Cool right?
BBQ Beef Chili infused with Darrin’s Mandingo Warrior Coffee or possibly Moor Espresso?
Prep time: 10 minutes (even longer if you wait to buy your weekly bag of my coffee)
Cook time: 10 minutes
Serves: 15 (8 high school football stars- preferably from Pike, my HS Alma Mater)
In short. Awesome.
Ingredients
2/3 cup dark brown sugar
1/2 cup Kosher Salt
1/3 cup of espresso ground Mandingo Warrior or Moor
1/3 cup chili powder
1/3 cup smoked paprika
3 tablespoons granulated sugar
2 tablespoons granulated garlic
1 tablespoon ground cumin
1 teaspoon cayenne pepper
Directions
Place all ingredients in a medium sized bowl and blend with a whisk. Then put the meat in an airtight container. Use 2 tablespoons per 1 pound of meat. This makes 2 1/2 cups of rub. There you go, a fantastic dish. Chili coffee in a bowl. Not sure how else to describe it. I wonder what my buddy Ernie Verbag at Grilliant Foods would do with this recipe?! (BTW, HE’S A CHAMPIONSHIP LEVEL BBQ KING!!!)
This rub would be perfect for grilling or smoked meats. And afterwards, during and before, drink coffee. Preferably a great NITRO COFFEE!!!
