Sulawesi Toraja Kalossi Premium Coffee comes from the Indonesian island of Sulawesi, formerly Celebes, a Dutch colony. Indonesia is the fourth largest coffee producing country in the world and Sulawesi Coffee is grown in the area near the southern tip of the isle. You may hear the term, Toraja when learning about the coffee. The name actually is an homage to the aboriginal people of the island. are named after the colorful indigenous people of the region. Kalossi, is regional market town where the coffee is traded frequently.
How is Sulawesi Kalossi Coffee Processed?
In the late 17th century, the Dutch trading companies introduced coffee to the island of Indonesia. Coffee is processed through a number of methods. Though not common knowledge, In a warm, not overly humid, climates, it can take coffee close to 4 weeks to complete the drying process that results in a cup. The island of Indonesia is far from dry, with a climate that varies between wet and really wet, the time to process the coffee bean must be shortened substantially. Enter the wet hulled processing method. The Toraja (Sulawesi) bean often has a color or shape that is less than desirable in appearance, yet the resulting flavor is one that’s heavy in body and a rich syrupy flavor.
How does it taste?
This single origin coffee is wet processed, low-acid and a chocolate earthy-ness that gives it the versatility that can be used in cold brew, a great single origin espresso or a single origin morning brew. Sulawesi or Celebs, is often roasted dark. Sulawesi coffee is known for its moderate acidity, and the light spice of cinnamon, cardamom and at times black pepper, with a sweet smoky flavor reminiscent of a dark almond chocolate bite in a cup! Sulawesi Kalossi Premium can be done as either a medium or dark roast. I generally prefer the darker side with this particular single origin Indonesian, it brings out the deep earthy body, just like a piece of 7 layer chocolate cake. Dude, it just works.
